The sun is shining, the temperatures are climbing higher, perfect to drink a latte macchiato, café au lait or a cappuccino on the terrace. But exactly on such days you have to be very careful.
For the perfect coffee enjoyment of coffee specialties with milk, it is not only important to have a good coffee machine to deprive the coffee bean the perfect taste, as important is the constant cooling of the milk to reach the hygienic requirements and the typical tasty flavor of milk.
Due to its composition, milk provides an ideal breeding ground for germs and bacteria. In order to inhibit their growth, the storage temperature of the fresh milk is around + 4 ° C depending on the manufacturer. When the milk is stored outside the refrigeration or when it is insufficiently cooled, the bacterial contamination in the milk increases exponentially. This can have health consequences.
In addition, it should be noted that higher temperatures favor the proliferation of lactic acid bacteria. These let the milk taste sour.
A common misconception is that H-milk in opened packages does not have to be refrigerated. You see often uncooled Tetra packs standing next to fully automatic coffee machines. In this case, too, Bacteria and germs can contaminate the milk through their transmission in the air and multiply themselves especially in summery temperatures. Admittedly it is very treacherous that the UHT milk can spoil without acidification and you can neither taste nor smell too high germ contamination.
The Federal Center for Nutrition, which is affiliated to the Federal Agency for Agriculture and Food (BLE), points out that the opened milk package (no matter whether fresh milk, H-milk or ESL milk) has to be stored in closed food safe containers to protect it against "flying" germs and bacteria and has to be kept it at a constant and optimal temperature for the milk.
In commercial coffee machines, this is partly guaranteed by integrated milk coolers. It is important to make sure that a suitable milk container is supplied, which is placed in the closed cooled area of the coffee machine.
Tetra Packs or similar sales packaging should not be placed directly inside the coffee machine, so that the contaminants of the outside packaging does not get into the machine.
If a coffee machine does not have a milk cooler directly "on board", you can also ensure optimal milk cooling by using one of our separate milk coolers.
Depending on the design, our devices can be placed next to or under the coffee machine. In cooling technology, we rely on refrigeration compressors. The amount of milk to be cooled, as well as the place of installation directly next to the coffee machine which always emits large amounts of heat, requires a high cooling capacity to ensure a constant interior temperature. All our milk coolers are equipped with matching milk containers with a lid. Thus, even when transporting the filled milk container from the kitchen to the machine no bacteria can contiminate.
